Professor of Food Science, studied for B.Sc at Faculty of Agriculture University of Khartoum, M.Sc at University of Leeds, Britain and PhD at UPM, Malaysia. Participated inseveral training courses and workshops in a variety of fields, including Food Science, curriculum development, population education, women in development, academic staff development, teaching methodology, electron microscopy, leadership and change. Supervised and co-supervised 9 PhD students and supervised 17 M.Sc students. Research interests include, 1-Aflatoxins in food and agricultural products. 2-Development of alternative milk coagulating enzymes 3-Antioxidants and phenolic compounds. 4-Enzymes purification and characterization. 5-Gum Arabic applications in food systems. Published several scientific articles in ISI journal of impact factor. Headed the Department of Food Science, appointed deputy dean, then dean of the College of Agricultural Studies, then dean of the College of Graduate Studies, Sudan University of Science and Technology.
